Tummy Troubles and Rain, Go Away

My stomach still isn’t feeling too great today. I skipped my morning coffee (I get VERY sad when I have to do this
) and shortened my yoga to half an hour, rather than my usual 1 full hour of it.
It was weird though because even though I wasn’t feeling well, I was still hungry and craved food. I’m not one to skip a meal just because I feel sick, ESPECIALLY breakfast.
Even though my tummy is the one that’s ailing, I still find emotional comfort in eating. I guess I’m a food blogger for a good reason!
Today’s breakfast really did a GREAT job of doing this. I might actually put it in my top 10 favorite breakfasts. And there wasn’t even any pumpkin in it!
It was just a simple PB & B French Toast.
I dredged Arnold Sandwich Thins in egg whites to make a regular french toast, then topped with peanut butter, frozen banana slices, and cinnamon.
In between the toasted bread slices, I slathered on 1/4 cup Fage greek yogurt mixed with 1 tbsp ground flaxseed.
Yum! I used to think I didn’t have time to make a french toast in the morning on weekdays so I would just go for oats or a yogurt bowl. I was wrong though. This took less than 10 minutes to make! Both the PB and the banana slices tasted amazing slowly melting on the hot bread.

The first thing I did when I arrived at work was brew myself a Yogi ginger tea – my favorite when I have an upset stomach. A bit pricier than other tea brands but it really works!
Plus, who doesn’t need an inspirational phrase now and then?
I packed a leftover of Sweet Potato Soup for lunch which I was excited about until… I realized we are out of plastic spoons in our office.
Sigh.. I was staring at this useless fork for a few minutes before digging in.
Luckily, the soup was pretty thick so I was able to scoop up a good amount with the fork. I also had toasted sandwich thins sprinkled with cinnamon, which I was able to use like a spoon.. sorta.
I made it to the bottom of the bowl somehow with the fork and bread soaking method. Where there’s a will, there’s a way! NOTHING comes in between me and my food.

We are SO hooked on those Arnold Sandwich thins. I love the honey wheat. Now I have to totally cover them with the PB and banana. You made me hungry.

This is genius girl! Yogurt in between the slices of bread. I have never even thought of that before! Def can relate to you about the emotional comfort from food, sometimes too much! Whoops! Ha =)

I will have to try the French toast idea with PB. I think I need to add some “good” fat into my diet…..

The french toast looks amazing – and it sounds quick enough to try tomorrow morning. Yum. BTW..great quote.
